Spring Garden SaladThis is a great salad for those who are maintaining weight, wanting to improve their health or undertaking a detox program.Spring Garden Salad

It’s great to eat in warm weather and very easy and quick to put together.

Salad

  • 2 handful baby cos lettuce
  • 1/2 avocado, chopped
  • 1 stem of shallots, cut into thumbnail sized pieces
  • 1/2 cucumber, sliced
  • 1 carrot, grated
  • 1 pinch of almond flakes
  • 2 handful alfalfa sprouts
  • 1 handful fresh parsley
  • 1 tomato, diced

Dressing

  • Juice of 1 lemon
  • Dried oregano to taste
  • Black pepper to taste

Directions

Mix the salad ingredients into to a large bowl and toss.

Mix together dressing ingredients in a small jar and drizzle over salad.

Increase the ingredients for a family sized salad.

To prepare for next day, put the veggies into separate ziplock bags. When ready to eat, mix together in a bowl, add almonds and drizzle with dressing.
