This is a great salad for those who are maintaining weight, wanting to improve their health or undertaking a detox program.Spring Garden Salad
It’s great to eat in warm weather and very easy and quick to put together.
- 2 handful baby cos lettuce
- 1/2 avocado, chopped
- 1 stem of shallots, cut into thumbnail sized pieces
- 1/2 cucumber, sliced
- 1 carrot, grated
- 1 pinch of almond flakes
- 2 handful alfalfa sprouts
- 1 handful fresh parsley
- 1 tomato, diced
- Juice of 1 lemon
- Dried oregano to taste
- Black pepper to taste
Mix the salad ingredients into to a large bowl and toss.
Mix together dressing ingredients in a small jar and drizzle over salad.
Increase the ingredients for a family sized salad.
To prepare for next day, put the veggies into separate ziplock bags. When ready to eat, mix together in a bowl, add almonds and drizzle with dressing.
