180g chicken (or seafood)
1 Tbsp coconut oil
1 Tbsp sesame oil
1 cup bean sprouts
1 clove garlic
1cm piece of root ginger, finely chopped
½ cup snow peas
½ cup red capsicum, sliced
¼ cup flaked almonds
1 Tbsp lemon/lime juice
1 Tbsp soy sauce
1. Saute chicken with coconut oil, ginger, garlic and soy sauce until golden.
2. Add vegetables and cook for another 2-3 mins.
3. Sprinkle almonds over meal just prior to serving
4. Dress with lime juice and sesame oil.
