ROCKET AND PEAR SALAD WITH BLUE CHEESE DRESSING
Serves 1 (Vegetable Side Dish)
2 handfuls baby rocket leaves
1 handful thinly sliced pear, skin on
1/4 cup roasted walnuts, chopped
3 tablespoons white wine vinegar
4 tablespoons extra virgin olive oil
2 teaspoons Dijon mustard
1 tablespoon lemon juice
1 tablespoon blue cheese
Pinch of salt
Pinch of pepper
To make dressing blend the last seven ingredients or whisk together thoroughly.
In a large bowl, place rocket leaves, pear, walnuts and half the dressing and combine lightly.
Transfer to a serving dish and drizzle over more dressing if required.
